Let’s talk about one of the most memorable wineries in Paso Robles. It’s called Tooth and Nail, and yes, it’s literally a castle. A legit moat and everything. If you’ve ever dreamed of sipping Viognier like royalty while surrounded by turrets and stone walls, buckle up. This is your spot.
I first discovered Tooth and Nail with my family right after graduating from Cal Poly Pomona in 2019. My parents are wine club members, which basically means I get to raid their shipments and pretend I’m cultured. Two years later, I found myself back at the castle with my best friend (completely by coincidence) on the exact same day. Clearly, fate wants me to drink here.
The Castle Situation
Pulling up, you can’t miss it. A full-on castle in the middle of Paso. The dramatic energy is high. As you’re walking up, suddenly you spot the moat and you’re like… excuse me?
On my second visit, we made a reservation and were seated outside near a fountain. It was a little chilly, but we were bundled up and happily sipping away under the awning. Bonus: we got to say hi to the winery dog a few times, which honestly added ten points to the whole experience.
Inside, the decor leans all the way into castlecore. Think cozy couches, big fireplaces, art-covered walls, and probably secret passageways (unconfirmed). The tasting room is grand but warm and welcoming. I’ve done both inside and outside tastings, and next time, I’m requesting a fireside seat with a glass of red and a charcuterie plate in hand.
The Wines Worth Talking About
Tooth and Nail makes great wine, but they also have side labels like Amor Fati and Stasis that keep things interesting. You’ll usually start your tasting with a splash of Amor Fati Chardonnay. It’s elegant, lightly oaked, and pretty much what you’d want to drink while feeling fancy. I gave it a 6 out of 10. It’s tasty but also $55, which made my wallet flinch a little.
Then there’s Fragrant Snare, a blend of Chardonnay, Albariño, and Viognier that’s crisp, creamy, and surprisingly fun. This one made me want to throw a dinner party with Dungeness crab and garlic herb butter. 8 out of 10, would sip again.
The Stasis Viognier? I was obsessed. Viognier deserves more hype in general, and this one really delivered. Bright acidity, great texture, and pairs well with everything from fried artichoke hearts to buttery fish. 9 out of 10, no notes, except that it’s wine-club only. I’m relying on my parents to come through.
One wine I didn’t love? The Amor Fati Pinot Noir. I’ve tried it more than once and each time I was like… okay? It’s drinkable, just not very memorable.
But the 2016 Amor Fati Grenache? That one caught me off guard in the best way. First sip was like, wait, what? And then I realized it tasted exactly like cherry Coke if it grew up, ditched the sugar, and got a little mysterious. I had to buy it. It was $60, but if you spend over $50 they waive your tasting fee, so really I got it for $30, right? Right. 10 out of 10.
We finished with “The Stand,” a red blend of Petite Sirah, Syrah, and Viognier. Solid, flavorful, bold. I didn’t buy a bottle, but that’s only because I already have a few at home. A good everyday red. 7 out of 10.
Oh, and if you ever see “The Fiend” on the menu, order it immediately. It was my favorite red blend they made, and I’m still holding out hope they bring it back. Manifesting.
Wine is Great, But Let’s Talk About the Food
We were hungry and not in the mood to drive into downtown Paso, so we stayed for lunch. We ordered the charcuterie board, Wagyu sliders, and garlic parmesan fries and it was a perfect match for our tasting lineup.
The charcuterie plate came with all the classics—crostini, dried fruit, cheese, meat, nuts, and a dreamy red wine jam. The Wagyu sliders were piled with caramelized onions, cheddar, and bacon jam, and honestly they were just begging for those garlic fries to join the party. 9 out of 10 for the food. Easily.
Why You Should Go
If you’re in Paso Robles, don’t sleep on Tooth and Nail. It’s got castle vibes, standout wines, and sliders that will haunt your dreams (in a good way). You’ll leave feeling a little royal and a lot wine-happy. Add it to your list, you’ll thank me later!
